How would this do if you wanted to use them for practicing grip strength?

This would not be a good product for grip strength as the ball is solid rubber through and through. We would recommend the soft indoor practice balls for grip strength.

Why do different colors have different stamps?!

Only a few colors are approved for game play, so they are the only ones that include the NOCSAE message on the stamp (required by rule). And, occasionally the Amazon database chooses a really old photo with the stamps that pre-date the NOCSAE rules.
