Are the sharpening elements in this sharpener replaceable?

Yes, once worn you can take them out and flip them. However once both sides are worn out I'm not sure where you you would get replacements. You will need a T10 screwdriver to take out the 3 screws

Will this sharpen my victorinox granton edge slicing knife

Yes! Does a great job. We bought it for the granton edge but use it for all our knives.

Is it ok for 10º angle knifes or just for the european 15º knives?

Feels wider than 10° probably closer to 15-20°

Is this suitable for sharpening kitchen scissors

I don't think so as this puts an edge on both sides of the blade whereas scissors have the edge on one side. It is however an excellent knife sharpener.
