I can’t tell by the pictures but what size water bottle can you fit on the side of there is a pocket?

The back back is big enough to fit a 64 oz water bottle inside and side pull strings can hold a 22oz to 32oz bottle fine. IT's a decent size backpack that can hold more than you expect. I recently took it on a trip to Tulum and was very impressed by it's functionality.

Is this bag submersible?

Yes I had it under water a few times to test it. I wouldn't push my luck and go diving lol.

Can rod holder be used to carry tripod? Large enough for camera and rain gear?

The rod holder works for the carry tripod, but just can hold one rod. The volume of this bag is 20L, it is large enough for camera and rain gear.
